Cinnamon Roll Quick Bread

Ingredients

  • 2 c flour
  • 1 T baking powder
  • 1/2 t salt
  • 1 c sugar
  • 1 egg
  • 1 c milk
  • 1/3 c vegetable oil
  • 2 t cinnamon
  • 1/3 c sugar
  • 6 T butter
  • 1 1/2 c powdered sugar
  • 1/4 c cream cheese, softened
  • 1 t vanilla
  • Directions

    1. Preheat oven to 350 F.
    2. Grease 4 mini loaf pans.
    3. In a small bowl, combine cinnamon and 1/3 c sugar (se aside).
    4. In a large bowl, combine flour, baking powder, salt, and 1 c sugar.
    5. Add egg, milk, and vegetable oil and stir just until moistened.
    6. Using about half the batter, fill each loaf about 1/2 full.
    7. Using about half the cinnamon sugar, evenly sprinkle among the loaves.
    8. Top loaves with remaining batter.
    9. Top loaves with remaining cinnamon sugar.
    10. Bake about 25-30 minutes (until toothpick comes out clean).
    11. Allow bread to cool.
    12. Combine butter, powdered sugar, cream cheese and vanilla.
    13. Drizzle topping on loaves.

    Notes

  • May want to microwave the topping for a few seconds to spread more easily.
